Creamy Elevated Instant Ramen

This recipe/method will work with just about any ramen packet, though the flavor you choose will obviously have an impact on the outcome. With egg, mayo, a bit of butter, cheese, and some fun toppings, this is a super fun way to eat a cheap meal.

Creamy Elevated Instant Ramen

Serves 1

Ingredients

  • 1 pack Ramen noodles of choice with seasoning packet
  • 1 Egg yolk
  • 1 tbsp Kewpie mayo
  • 1 slice American or Cheddar cheese
  • 1 tbsp Salted butter
  • 1 Egg poached or soft boiled
  • Scallions for garnish
  • Chili oil for garnish

Instructions

  • In a bowl or cup, add 1 egg yolk, 1 tbsp kewpie mayo, and the ramen seasoning packet. Use a whisk or fork to mix this until it is a smooth paste and fully combined.
  • Bring a pot of water to a boil and add the ramen noodles. Boil according to package instructions until cooked to your liking. Take hot water from the pot, 1 tablespoon at a time, and add it to the bowl of sauce, whisking to combine. Add 2-3 tbsp of hot water total. Drain the noodles of about 90% of their remaining water, then return to pot off the heat.
  • To the noodles in the pot, add 1 tbsp salted butter along with the yolk/mayo/seasoning sauce. Stir until well combined and butter is melted. Add 1 slice of american cheese or about 2-3 tablespoons of mild shredded cheddar cheese. Stir until fully melted.
  • Pour the pot of noodles into a bowl, then garnish with generous amounts of sliced scallions, a drizzle of chili oil, and a poached or soft boiled egg.

Tips & Variations:

Egg yolk: If you don’t want to risk using a raw egg yolk (though it does warm up in the soup), replace it with a second tablespoon of mayo.
Kewpie: I highly highly recommend using the Japanese Kewpie mayo (not the American version), but if you cant get your hands on that you can use any Japanese mayonnaise or just your favorite mayo.
American cheese: substitute with a slice or pinch of cheddar cheese, mozzarella, parmesan, or really whatever cheese you like. For the creamiest and smoothest result, American cheese is the best.
