Creamy Angel Hair Cherry Tomato Pasta

One of my all-time favorite simple pastas! I love this dish in the summertime when the cherry tomatoes are deep red and sweet. They’re just lightly cooked with butter and cream to create this super comforting dish.

Creamy Angel Hair Cherry Tomato Pasta

Ingredients

  • 6 ounces Angel hair pasta (DeCecco No. 9 is best) or other pasta shape.
  • 1 cup Halved cherry tomatoes or diced large tomatoes
  • 2 tbsp Salted butter
  • ¼ cup Heavy cream or more as needed
  • Salt & pepper to taste
  • Chopped chives for garnish

Instructions

  • Bring a medium pot of salted water to a rolling boil, then cook the angel hair to al dente according to package instructions. Reserve at least ½ cup of pasta water, then drain the pasta and set aside.
  • Place the empty pot back onto the stove over medium-low heat. Melt 2 tbsp salted butter and add 1 cup of halved cherry tomatoes. Saute over medium for 1-2 minutes, until the tomatoes begin to soften.
  • Add ¼ cup heavy cream to the tomatoes and gently simmer over medium heat for 1-2 minutes or until the cream thickens and looks slightly orange-red. Season with a pinch of salt and then add the cooked and drained pasta back into the sauce.
  • Stir to combine while adding splashes of pasta water. Continue to add pasta water as needed until the sauce and pasta are at your desired consistency. Taste and add more salt and pepper as needed.
  • Serve hot, spooning cherry tomatoes over the top of the pasta. Garnish heavily with thinly sliced chives.

Tips & Variations:

  • This recipe is super customizable and loose. Adjust as needed in terms of heavy cream amounts, ingredient choices, garnishes, etc.

Substitution ideas:

  • Angel Hair – I think this works best with long and thin pastas, but any kind of pasta will work great.
  • Cherry tomatoes – Feel free to use grape tomatoes, sungold tomatoes, heirloom tomatoes, or any other variety. For large tomatoes, I recommend dicing them rather than halving.
  • Heavy cream – Substitute with something like creme fraiche or a dairy free option if needed.
  • Chives – For garnish, use any herb you like. Basil works very well here.
